The key to good peppermint tea is not using water that is "rolling boiling," which can sometimes scorch the delicate leaves and lead to a bitter taste.
- Fresh Leaves: Use about 7–10 leaves per cup. Gently "clap" or bruise them in your hand first to release the essential oils (menthol). Steep in hot water for 5–7 minutes.
